This is an easy recipe which will take just ten 10min to prepare it. A tasty snack and a great way to use up overripe bananas. My husband loved this amazing banana bread.


  • 285g plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 110g butter
  • 225g caster sugar
  • 2 eggs
  • 4 ripe bananas, mashed
  • 85ml  milk mixed with 1½ tsp lemon juice
  • 1 tsp vanilla extract


Preheat the oven to 180C. Sift the flour, bicarbonate of baking powder and salt into a large mixing bowl. In a separate bowl, cream the butter and sugar together until light. Add the eggs, mashed bananas, milk and vanilla extract to the butter and sugar mixture and mix well.  Pour into the tin and bake for 40 mins.
